2 large plums, diced
¾ cup 35% cream
2 ¼ cup all-purpose flour
¼ cup sugar
2 tsp baking powder
½ teaspoon salt
6 tbsp butter, cubed
Preheat oven to 425°F.
In a large bowl, mix together flour, sugar, baking powder and salt.
In a small box whisk together cream and egg.
Cut butter into flour mixture using a pastry cutter or your hands until it resembles coarse meal.
Pour in cream and egg mixture.
Mix just until combined.
Mix in plums and mix but be careful not to overwork the dough.
Move dough to a lightly floured counter top.
Shape dough into a circle.
Transfer to a lined baking sheet.
Cut into 8 slices.
Bake for 25-30 minutes, or until golden brown.
